I have been spending a lot of time on Pinterest lately and absolutely loving all the baking posts. I’m not a very big sweet lover but will never ever say no to chocolate cake so I thought i’d give chocolate cupcakes a go. I can honestly say this is the first time I’ve made these from scratch and although they aren’t the best I am very pleased with myself 🙂
So first of all, for the cakes you’ll need;
- 3 eggs
- 165g caster sugar
- 1tsp baking powder
- 40g cocoa powder
- 175g unsalted, soft butter
- 115g self raising flour
- 4tbsp boiling water
And for the icing, you’ll need;
- 60g unsalted , soft butter
- 3tbsp milk
- 30g cocoa powder
- 250g icing sugar
STEP ONE Line a muffin tin with paper cases. Sift the cocoa powder into a bowl, pour in boiling water and mix into a thick paste. Add the remaining cake ingredients and mix with an electric hand whisk or beat with a wooden spoon.
STEP TWO Divide the mixture equally between the paper cases. Bake in a preheated oven at 200°C (gas mark 6) for about 12-15 minutes until well risen and springy to the touch. Cool in the cases on a wire rack.
STEP THREE To make the chocolate icing melt the butter and pour it into a bowl. Sift in the cocoa powder and stir in the icing sugar a little bit at a time to make a glossy and spreadable. If the icing is too thick, gradually add the milk until it reaches the desired consistency. Pipe over the cupcakes, sprinkle with chocolate decorations and leave to set before serving.
