This time of the year, when it’s warm and sunny, I always find myself eating a lot more salads than I would in winter. I am quite a fussy eater so only like quite basic salad ingredients, but I do enjoy a good salad. Especially as it makes me feel better about myself for eating healthy. Today I thought i’d share with you some of my favourite salads that I have been eating quite recently. They’re all quick and easy to make and really affordable. They are also very adaptable, so I have used meat in all of these salads but if your a vegetarian, the meat can be easily swapped for products like Quorn etc.
BBQ Chicken, Bacon and Avocado salad.
- Chicken breast
- BBQ seasoning
This salad was so filling. I fried the chicken in a pan using frylight, once its nearly cooked I added some BBQ seasoning and let it soak into the chicken for around 10 minutes. I also grilled the bacon for around 20 minutes. Grilling the bacon is the healthiest way to cook bacon. I then added them both to my bed of salad and waalaa.. Amazing salad and so easy to do.
Tuna crunch pasta salad.
Super quick, super easy. Just cook the pasta, wait for it to cool, then add all the other ingredients and mix it all and your pasta salad is done. With or without the tuna, this pasta is also really nice as a side dish for BBQ’s too.

Okay, so this one sounds gross, but its not – its amazing!!!! On slimming world, this is called ‘Big Mac in a bowl’ and it honestly tastes just like a Big Mac, just a healthier version. Give it ago, you’ll be very surprised. I normally just cut all the salad up and put it in a bowl, cook the mince beef and add it on top of the salad, then add the burger sauce. You can then add cheese for the full effect of the Big Mac but I don’t like cheese so I don’t use it in mine.
BLT pasta salad.
Again, another simple pasta salad that is something different and great as side dish at BBQ’s. I just cooked the pasta, let it cool down, then grilled the bacon, let that cool down and added the rest of the ingredients. Quick and easy.
Around this time of the year I also tend to eat a lot more fruit salads for breakfast. It’s so easy to just chop up some fruit, chuck it in a bowl and add some yogurt. Starting the day off with a nice healthy breakfast always makes me feel good, energised and refreshed.
